Back in summer I had posted Vegan Matcha jelly with Mango on social media and I had great feedback. It was very light and yummy dessert so I thought it would be great to keep the recipe here.
I used Kanten powder – this ingredient is quite common in Japan and it is similar to agar powder. There are many Kanten Jelly sold in supermarkets and also we make it at home. I remembered Milk Kanten that I used to love in my childhood so I thought it was good idea to add Matcha powder.
Agar is very healthy too! Check out from Wikipedia
It’s very low calories so you can have big portion!
Ingredients:
250 ml water
4g Kanten powder (or agar agar powder)
300 ml rice milk (or coconut milk)
2 tsp Agave syrup
1/2 Mango pieces
1 Tsp matcha powder
Method:
- Cut Mango into pieces
- Boil 250ml water
- Add Kanten powder (or agar agar powder) and cook for 3 min then turn off the fire
- Add Agave syrup and stir
- Add 300 rice milk and stir
- Put Mango pieces and half of 4 in the glasses and cool in the fridge for about 15 min until solid
- Add 1 tsp Matcha powder to the rest of 5 and stir (in case it starts getting solid before, warm it again in microwave)
- Top Matcha mixture over 6 and put them in the fridge
- Top Mango pieces again over 8 and garnish with mints
This recipe is quite light (low calorie) so you can also use less water and more milk to make more rich!
